Once the grains are ground they are brought to Black Button's silos in the heart of Rochester, where they are mashed, fermented, distilled, and aged in barrels for as long as necessary to make great tasting bourbon. Smaller barrels are ready in a year while some of the largest are not ready for four or five years, so they constantly taste and work the barrels to develop optimal flavor. And when that flavor is just right, when each barrel is ready, they find the right blend to call their own.
